Korean clay pot steamed eggs, a soft and warm homemade comfort food that's perfect for a quick and easy meal when you're craving something cozy!
Crack 2 eggs (about 120g) into a bowl, remove the chalaza, and mix well with 0.5 teaspoon salt and 1 tablespoon cooking wine.
In a small clay pot, add 100ml water and 0.5 tablespoon salted shrimp. Bring to a boil over high heat, then reduce to medium heat once it starts boiling.
Pour the prepared egg mixture into the clay pot, and gently stir with a spoon for about 1 minute, scraping the bottom until soft curds begin to form.
When the eggs are about 80% cooked and start to thicken, add finely chopped green onion and carrot on top. Reduce to low heat and cover with a lid.
Let it steam on low heat for about 2 minutes. Once it has a nutty aroma, drizzle 0.5 tablespoon sesame oil over the top and turn off the heat.
