Grilled chicken neck recipe — perfect for a light, chewy snack or as an appetizer!
Rinse the chicken necks under running water, then pat dry thoroughly with a kitchen towel to eliminate odors.
Add 1 tablespoon of cooking oil to a pan and preheat over high heat. Once it starts to smoke lightly, place the chicken necks in the pan without overlapping.
When the surface of the meat starts to turn white, reduce to medium heat and add garlic and green onion. Sauté together to infuse the flavors.
Pour in 1 tablespoon of cheongju (rice wine) to remove any unwanted odor, then evenly sprinkle savory salt and pepper to season.
As the chicken necks release enough oil and the surface becomes crispy and golden, continue flipping and cooking for about 3 more minutes.
When the green onion turns brown and the meat is golden, turn off the heat and toss everything in the residual heat once again to finish.
