Gosari Soup is perfect for warming yourself up when you’re feeling low on energy!
Cut the boiled fernbrake (gosari) into 5cm pieces and the beef brisket into bite-sized pieces.
Add 1 tablespoon of sesame oil to a pot and, over low heat, stir-fry the beef until the surface changes color.
When the meat changes color, add the fernbrake, 1 tablespoon of gochugaru (Korean chili powder), and 0.5 tablespoon of minced garlic. Stir-fry over medium heat for 2 minutes to bring out the aroma.
Add 500ml of water, bring to a boil over high heat, then reduce to medium-low heat and simmer for 20 minutes to infuse flavor.
Season with 1.5 tablespoons of soy sauce for soup (guk-ganjang), adjust saltiness with 0.5 teaspoon of salt, add diagonally sliced green onion, and simmer briefly to finish.
