Soak pork head meat with the blood removed in cold water for 30 minutes to get rid of the initial odor.
Place the meat in a pot and add enough water to cover. Dissolve 1 tablespoon of doenjang (soybean paste) and 1 tablespoon of cooking wine, then bring to a boil over high heat.
When the water starts to boil, add the meat, green onions, sliced ginger, garlic, and whole black peppercorns. Reduce to medium heat and simmer uncovered for 10 minutes to let the smell dissipate.
Cover the pot and simmer gently over low heat for 40 minutes, adjusting the timing so the meat becomes tender.
Take out the well-cooked pork, let it cool slightly, thinly slice against the grain, and plate it.
