Cut vegetables such as onion, carrot, celery, and broccoli into bite-sized pieces.
Heat olive oil in a pot and sauté the onions.
When the onions become translucent, add the remaining vegetables and minced garlic, and cook for 2-3 minutes.
Add tomatoes (or canned tomatoes) and water, and bring to a boil.
Season with bay leaves, salt, and pepper, then simmer on low heat for 20–30 minutes.
Add herbs (basil, oregano, etc.) to taste and simmer once more.
When all vegetables are cooked through, serve in a bowl to finish.
