Mala Japchae Rice recipe – perfect for days when you crave something spicy and flavorful in a single bowl!
Soak glass noodles in lukewarm water for 20 minutes, then boil them in boiling water for 3 minutes. Drain well and remove excess moisture.
Heat 1 tablespoon of cooking oil in a pan over low heat, add green onion and minced garlic, and sauté until aromatic.
Raise the heat to high and add pork. Stir-fry quickly until the outside turns white.
Add onion and wood ear mushrooms and stir-fry for 1 more minute until the onions become translucent and adjust the moisture.
Add the soaked noodles, 1.5 tablespoons mala sauce, 0.5 tablespoon dark soy sauce, and 0.5 teaspoon sugar. Mix well for the seasonings to absorb.
Finally, add bok choy and stir-fry quickly for just 30 seconds, until it just softens.
Place the finished mala japchae over a bed of warm cooked rice for plating.
