Pat tofu dry with a kitchen towel to remove any moisture.
Evenly coat the tofu pieces with potato starch.
Heat cooking oil in a pan over medium-low heat.
Pan-fry the tofu until golden and crispy on both sides.
In a separate bowl, mix soy sauce, gochujang (Korean chili paste), sugar, minced garlic, water, and oligo syrup to make the sauce.
Pour the sauce into the pan and bring to a boil.
Add the fried tofu pieces to the sauce and toss well to coat.
Serve on a plate and garnish with sesame seeds and chopped scallions.
