Ginseng Salad: Perfect for when you're feeling tired or want to stimulate your appetite with a light dish!
Remove the root head of the ginseng and scrub it with a brush under running water to clean off any dirt, then dry thoroughly.
Slice the cleaned ginseng thinly at a diagonal, about 0.2cm thick, to preserve its texture.
In a bowl, combine 1 tablespoon gochujang (Korean chili paste), 0.5 tablespoon red chili flakes, 1 tablespoon vinegar, and 1 tablespoon oligosaccharide syrup, and mix well so the seasoning blends evenly.
Add the prepared ginseng and thinly sliced jujube to the seasoning sauce, and gently toss so the flavors absorb evenly between the ginseng slices.
Finally, add 0.5 tablespoon sesame oil and 1 teaspoon toasted sesame seeds, and toss gently one more time to keep the savory aroma.
