Use the back of a knife to scrape the scales from the croaker, moving from the tail toward the head. Trim the fins neatly with scissors.
Soak the cleaned croaker in rice water for 5 minutes to remove any fishy odor, then pat dry completely with a kitchen towel.
Make 2-3 slits on both sides of the croaker's body and sprinkle 0.5 teaspoon of salt evenly to season.
