Cut the pork neck into bite-sized pieces.
Season with smoked salt and pepper.
Sprinkle smoking spices (herbs, bay leaves, etc.) over the meat.
Heat oil in a pan and lightly sear the outside of the pork neck, then remove.
Pour water into a steamer and set the steaming rack.
Place the smoked pork neck on the rack and cover with a lid.
Steam over medium-low heat for 40–50 minutes.
Slice the cooked pork neck into serving pieces and plate.
