Cold Soy Milk Soup recipe – it's refreshing and rich, perfect for enjoying on hot summer days when you have little appetite!
Soak 80g of cleanly washed yellow soybeans in cold water for at least 5 hours.
Put the soaked beans and water in a pot, bring to a boil over high heat, then reduce to medium once foam appears and cook for exactly 10 minutes to remove any beany smell.
Rinse the cooked beans immediately in cold water, rub with your hands to remove the skins for a clean texture.
Blend the prepared beans, 1 tablespoon roasted crushed peanuts, and 300ml cold water extremely finely in a blender.
Pour the finished soy soup into a bowl, add julienned cucumber and roasted black sesame on top, then season to taste with 0.5 teaspoons each of salt and sugar.
