Spicy Jokbal recipe – perfect for days when you’re stressed and craving something chewy and spicy!
Dice the onion into 2cm cubes and slice the green onion and Cheongyang chili peppers thinly (0.5cm).
In a bowl, mix the measured amounts of gochujang (Korean red chili paste), gochugaru (Korean chili flakes), dark soy sauce, oligosaccharide syrup, minced garlic, and black pepper to make the seasoning sauce.
Preheat a pan on medium heat and add the sliced jokbal (pigs’ feet) without oil. Stir-fry for 2 minutes until the skin turns slightly translucent to render some of the fat.
Add the prepared onions and green onions, turn up the heat to high, and stir-fry quickly for 1 minute until the vegetables are just starting to soften.
Pour in the seasoning sauce, reduce to medium heat, and fry the jokbal for 2 minutes until the sauce turns sticky and coats the meat well. Be careful not to burn the sauce.
Turn off the heat, add sesame oil and Cheongyang chili peppers, and mix once more with the residual heat to finish.
