Soft Tofu Stew recipe — perfect for when you want something light, warm, and comforting!
In a small pot, heat 1 tablespoon of cooking oil with green onion over low heat, sautéeing until the oil is infused with the onion flavor.
Add 1 tablespoon of Korean chili powder and gently stir-fry on very low heat for 1 minute to make chili oil, being careful not to burn it.
Pour in 150ml of water and add clams. Increase the heat to medium and let it come to a gentle boil.
When the clams start to open, scoop in large chunks of soft tofu with a spoon.
Season with 1 tablespoon of soup soy sauce and 0.5 tablespoon of minced garlic. Adjust the final taste with 0.5 teaspoon of salt as needed.
Bring to a boil over high heat for 2 minutes until the soft tofu is fully heated through, then finish cooking.
