Cut the pork, potatoes, and onion into bite-sized cubes (about 2cm) and prepare the ingredients.
Add the pork to a pot preheated over medium heat and stir-fry for about 2 minutes, until the surface turns white and releases fat.
Once the fat has rendered, add the potatoes and seasoning sauce (gochujang, chili powder, soy sauce, minced garlic, sugar), and stir evenly over low heat for 1 minute to infuse flavor without burning the sauce.
Pour 200ml of water, bring it to a boil over high heat, then lower to medium-low and simmer gently for 10 minutes until the potatoes are fully cooked.
Once the potatoes are cooked and the broth thickens, add onion, green onion, and Cheongyang chili pepper. Simmer for an additional 3 minutes until the broth reduces slightly and finish.
