Ox Bone Soup (Sagol Gomtang) is perfect when you want to replenish your energy with a deep and rich broth!
Soak ox bones and beef shank in cold water for at least 3 hours to remove excess blood, changing the water 2-3 times during soaking.
Add enough water to cover the ox bones in a pot, boil on high heat for 10 minutes to eliminate impurities, discard the water, and rinse the bones with lukewarm water.
Place the washed ox bones and 1.5L of water back into the pot, bring to a boil over high heat, then reduce to medium-low and simmer gently for over 5 hours.
Once the broth becomes milky, remove the cooked beef shank, slice it thinly, and skim any fat from the surface with a ladle to keep the broth clean.
Place the sliced beef shank and chopped green onions in a bowl, pour in the hot ox bone broth, and season with salt and pepper to taste.
