Beef Tripe Soup is perfect as a nourishing meal when you're craving a spicy and hot broth!
Cut the cleaned beef tripe into 5cm pieces. Slice the radish thinly, diagonally slice the green onion, and squeeze the water from the napa cabbage greens before cutting them into bite-sized pieces.
Pour beef bone broth into a pot, add the radish, and bring to a boil over high heat. Once it boils, reduce to medium heat and cook the radish until it becomes half-transparent.
Mix chili powder, soybean paste, minced garlic, and soy sauce to make a seasoning sauce. Toss the napa cabbage greens with the sauce to soak in flavor, then add them to the boiling broth.
Add the prepared beef tripe, then pour in cooking wine and ginger powder to eliminate any odor. Simmer gently over low heat for 15 minutes, allowing the flavors to develop.
Once the beef tripe is tender, add oyster mushrooms and green onion, and cook for an additional 3 minutes until the vegetables are wilted. Finish with a sprinkle of pepper.
