Aged Kimchi Braised Pork recipe – perfect for when you crave a spicy and rich flavor! Pairs wonderfully with a bowl of rice.
Trim the bottom of the aged kimchi and cut it lengthwise; slice the pork shoulder into large pieces about 4 cm thick.
Lay sliced onions at the bottom of a pot. Place the pork and aged kimchi on top. Drizzle 1 tablespoon perilla oil and stir-fry over medium heat for 2 minutes to enhance the flavor.
Pour 300 ml rice water, then add chili powder, minced garlic, sugar, and soy sauce for soups. Raise the heat to high until boiling, then reduce to medium-low.
Cover with a lid and simmer for 30 minutes, checking occasionally to ensure it doesn't dry out. Adjust the heat as necessary.
When the kimchi becomes soft, add diagonally sliced green onions and simmer for another 2 minutes to finish.
